La Savina Mediterranean Grill opens at Mondrian South Beach

Morgans Hotel Group's new coastal Mediterranean restaurant brings a taste of the Spanish Coast to Biscayne Bay.

NEW YORK – As season heats up in South Florida, Morgans Hotel Group Co. has launched a new 140-seat restaurant, La Savina Mediterranean Grill at Mondrian South Beach. Inspired by the island of Formentera, Spain, La Savina brings the free spirit, bohemian sensibility and culinary bounty of the Balearic Islands to South Beach. The new restaurant features an award-winning culinary team led by Morgans Corporate Executive Chef Tien Ho (Momofuku, Best New Chef Food & Wine). La Savina’s team has perfectly captured and transported the natural and abundant flavors found on the Mediterranean coast to Biscayne Bay. Eliciting the spirit of these magical islands, La Savina offers a simple mix of fresh crudos, grilled meats and fish, artisanal charcuteries and the best seasonal vegetables in South Florida, served alongside Mondrian’s unmatched views of Biscayne Bay.

La Savina’s Mediterranean kitchen specializes in simple, highly flavorful chargrilled meats and fish prepared in the classic “a la parilla” style that is the staple of coastal Mediterranean cooking. Chef Ho intends for guests to share their meal and experience “in the style of Mediterranean families, who socialize for hours over beautiful meals with incredibly fresh seasonal ingredients.” Signature crudo offerings include Hamachi with Serrano chili, crispy shallot and lime; Tuna with romesco and cilantro; Scallop with yuzu, jicama and sorrel; and Crab Salad with espelette, grapefruit and Spanish olive oil. Stand out menu items include the Roasted Carrot Salad with feta, cherry peppers, tomatoes and pistachio vinaigrette; Grilled Romaine Wedge with poached egg, pecorino and roasted garlic vinaigrette; Valencia Rice with braised kale and slow-roasted tomato; and a 24-ounce Niman Ranch Grass-Fed Ribeye or Whole Florida Yellowtail Snapper, “a la parilla” with chargrilled lemon and salsa verde.

Seamlessly marrying the restaurant to its setting, Morgans Hotel Group’s Design Team of Tony Machado and DeVinn Bruce were inspired by the style and relaxed interiors of Formentera beach homes. The indoor, outdoor restaurant boosts a garden overlooking Biscayne Bay with multiple seating options filled with oversized planters, rattan lampshades, Beachwood tabletops and intimate lantern lighting. The interior dining room brings the Beachwood and bohemian energy inside with concrete colored walls and reclaimed wood throughout the space.

La Savina’s beverage menu features a broad selection of Mediterranean wines and cocktails fit for every palate and price point. The cocktail program is anchored by a rotating selection of market-fresh cocktails, including a Roasted Rosemary Old Fashioned made with Old Foster, Rosemary, & Orange Bitters and the West Avenue made with Bacardi Rum, Strawberry Cinnamon Falernum, & Lime. The comprehensive beer list features American microbrews from local New York breweries and European craft brews served in short, chilled Mediterranean-style beer glasses known as Canas. In addition, La Savina’s red and white table wine is available by the glass or carafe. The signature “Savina Sangrias” are offered in flavors such as Rosemary Pear, Ginger Pineapple, and Hibiscus-Lemon.

Located just off the entrance of La Savina is Cafe Savina. Open for breakfast, lunch and cocktails, Cafe Savina is a market-driven Mediterranean-inspired cafe and wine bar. Cafe Savina is the perfect place for a coffee and croissant in the morning or a cocktail with some charcuterie in the evening. Cafe Savina features fresh-pressed organic juices by OnJuice™, single-origin coffees and espressos from La Colombe and a selection of pastries and breakfast items such as oatmeal, muesli and organic egg sandwiches. For lunch, Cafe Savina offers a selection of market-fresh salads and sandwiches for guests, residents and neighbors to enjoy in a casual setting. As the sun sets, Cafe Savina transforms into a tapas bar similar to those of Barcelona, offering a selection of tapas items, including artisanal charcuteries and cheeses, alongside a large selection of Spanish wines, beers and cocktails. Cafe Savina is the perfect the perfect place to unwind, recharge or meet up with friends, whether as a hotel guest or a South Beach local.
