INDIA – Gabriel Kolofon has joined Belmond Maroma Resort & Spa, Riviera Maya, Mexico as Executive Chef starting May 2016, bringing his style of using seasonal, local produce to create sensational dishes to the resort’s three restaurants; Freddy’s Tequila and Ceviche bar, a beach-side lounge serving vibrant fresh-fish ceviche, sushi and sashimi, El Sol Tapas & Restaurant,combining Mediterranean-style cuisine with a unique Mexican twist,and El Restaurante, the more informal option which offers an eclectic mix of regional specialties.
