Fairmont Dallas introduces Edward Searle as Director of Food & Beverage and George Sous as Director of Rooms

Searle will oversee all Food & Beverage operations at Fairmont Dallas and Sous will oversee all functions of the Rooms Division and Loss Prevention for the 545-room hotel.

DALLAS – Fairmont Dallas welcomes two members to their staff as spring 2022 begins, Edward Searle has been appointed Director of Food & Beverage and George Sous has been appointed Director of Rooms.

Reporting to the Hotel Operations Director, Searle will oversee all Food & Beverage operations at Fairmont Dallas. He most recently worked as Director of Food & Beverage at Hilton Granite Park Hotel in Plano, Texas, and prior to that he was the Restaurant General Manager at Palomar Hotel, Restaurant General Manager at Marie Gabrielle Restaurant, and Director of Food & Beverage at The Warwick Melrose Hotel, all in Dallas, Texas. Searle brings over 20 years of hotel and free-standing food and beverage and leadership to his new position. 

“I am very passionate about the hospitality industry because creating unique, memorable, and personalized connections with guests and associates has been, and will continue to be, my ultimate aspiration,” Searle said. 

Reporting to the Hotel Operations Director, Sous will oversee all functions of the Rooms Division and Loss Prevention for the 545-room hotel. He brings over 12 years of experience to Fairmont Dallas, beginning his career as a Rooms Intern at the Historic Palmer House Hotel in 2011. After completing Hilton’s Management Development Training Program, Sous served as Director of Housekeeping at multiple properties including the Hilton Chicago and Towers and Conrad Chicago. Sous joined the Accor family at the Swissotel Chicago as Director of Housekeeping in 2019.

Fairmont Dallas is located in the heart of the Dallas Arts District with 545 guest rooms, a rooftop terrace complete with garden and Junior Olympic sized pool, and 70,000 square feet of meeting space. The hotel is home to the Pyramid Restaurant and an on-site Starbucks on the Lobby level, making it an ideal location for those traveling for business and pleasure. Fairmont Dallas celebrated its 50th anniversary in 2019.
