Garden of the Gods Resort and Club takes culinary program to new heights with Chef Keith Theodore

Acclaimed resort elevating the dining experience with new Vice President of Culinary.

COLORADO SPRINGS, CO – Garden of the Gods Resort and Club announces that Keith Theodore will lead the resort into its next era of culinary excellence as the Vice President of Culinary. This addition to the strategic leadership and culinary teams is amongst many of the exciting changes coming to Garden of the Gods Resort and Club aimed at elevating the already exceptional luxury wellness destination.

In this prominent culinary role, Theodore will oversee all food production, as well as the creative development of engaging menus for the resort’s selection of dining venues including Grand View Restaurant, Rocks Bar and Lounge, Kissing Camels Grille, pool-side dining, in-room dining, banquets and events as well as creating and executing special events throughout the year.

Theodore, an Executive Chef with a proven track record of enhancing the food experience in many top-ranked luxury hotels and resorts, brings a vision of curating a dining experience in which diners are not only delighted by the flavors of their dishes but are also nourished by the food to help them fuel a life well lived. He will carry out this commitment to wellness through food at Garden of the Gods Resort and Club by perfecting the basics – using the freshest ingredients, sourcing from local producers when possible and executing craveable menu items consistently. Wherever guests are on their wellness journey, Chef Theodore intends to meet them with food they can enjoy.

“I want to create memorable Colorado Cuisine that highlights the beautiful ingredients by manipulating them less and using refined techniques to maximize their flavor,” said Theodore. “Incorporating Colorado foods gems such as Front Range asparagus, San Luis Valley quinoa, and Rocky Ford cantaloupe when they are in season connects the menu to the destination. We want to approach dining at Garden of the Gods Resort and Club with a whole-ingredient mindset to create delicious, holistic food that keeps people well and coming back for more.”

Theodore’s perspective on crafting healthy and delectable dishes was acquired throughout his career, in the kitchens of many renowned Colorado hotels including The Broadmoor Hotel, where he began his career as an apprentice and worked his way up to the Sous Chef position at The Tavern and The Charles Court. Thereafter he joined the St. Regis Resort as the Executive Sous Chef in Aspen, CO where he partnered with Food and Wine Magazine to develop the restaurant, The Chefs Club. Theodore further developed his skills as the Executive Chef of Syzygy Restaurant and then The Little Nell resort in Aspen, Colorado. During the eight-year period in which he worked for The Little Nell, he was able to rise through the ranks starting as the Executive Banquet Chef of the property’s globally recognized banquet and catering operation and eventually being promoted to Executive Chef. Thanks to his incredible leadership skills, a keen eye for detail, and creativity in the culinary space, he maintained the resort’s Forbes 5 Star and AAA Five Diamond Awards.

These new additions to the resort’s senior leadership team are just part of the inspired enhancements coming to Garden of the Gods Resort and Club in the new year. The property is also undergoing an impressive renovation which will include a complete remodel of all lodge guest rooms, a full-scale renovation to the signature Grand View dining room and terrace, the addition of three new outdoor tennis courts and six pickleball courts, transformation of the arrival experience, upgrades to Strata salon and spa and much more. These refreshments, which are expected to be completed in Spring 2023 will further elevate the feeling of enrichment, wellness, discovery, and relaxation that guests and members of the resort enjoy.
