NEW ORLEANS, LA — Sheraton New Orleans Hotel is delighted to announce the appointment of Billy Mark as the property’s new Director of Food & Beverage. With a distinguished hospitality career spanning over 30 years, Mark brings a dynamic approach to culinary excellence that promises to elevate the dining experience for our hotel guests.

Born in Germany into a multi-cultural family with a military background, Mark’s upbringing catalyzed his appreciation for travel and different cultures. He spent his childhood living overseas and discovering a vast array of cultural flavors, while also being exposed to his mother’s Indonesian background.

My main inspiration comes from my travels,” said Mark. “Seeing how different cultures welcome guests into their worlds taught me how to embrace different hospitality customs and how to be of service to others.”

Mark’s extensive experience began at the Walt Disney World Swan and Dolphin Resort in Lake Buena Vista, FL, where he contributed as a bartender and server before he was quickly promoted to Food and Beverage Manager. After dedicating six years to managing the resort’s food and beverage program, Mark took on a variety leadership roles across renowned hotel brands including Hilton and Wyndham. In his new role, he will lead a talented team and spearhead all food and beverage opperations, including Gatherings by Sheraton, weekly presentations that showcase the hotel’s wide range of F&B offerings.

Mark’s appreciation for other cultures is what makes him the perfect fit for our hotel,” said Jim Cook, General Manager of the Sheraton New Orleans Hotel. “As The World’s Gathering Place, we are a melting pot in the heart of New Orleans where guests experience not only the city’s local flavors, but also those spanning the globe. Mark is joining a culinary team already packed with many different cultural backgrounds, most notably our new Executive Chef Chandra Swamy, who brings his Indian heritage and traditions to the team.

Throughout his career, Mark has worked under some of the best leaders in the industry. Guided by the wisdom of award-winning chef and mentor Fernando Salazar, Mark embodies “the relentless pursuit of excellence.” His leadership is characterized by a continuous drive for innovation and quality, ensuring that every dining experience is nothing short of remarkable.
