The Westin Riverfront Resort & Spa hires Bryan Simonsen as Senior Food & Beverage Manager

With more than 16 years of restaurant industry experience, Bryan Simonsen most recently spent more than three years as the General Manager of Blue Moose Pizza in Beaver Creek Village.

AVON, COLO. – The Westin Riverfront Resort & Spa Avon, Vail Valley has hired Bryan Simonsen to serve as Senior Food & Beverage Manager at the resort, including overseeing Stoke & Rye, the new modern American grill by Chef Richard Sandoval.

With more than 16 years of restaurant industry experience, Simonsen most recently spent more than three years as the General Manager of Blue Moose Pizza in Beaver Creek Village. Simonsen attended Valdosta State University and also previously served as the Operating Partner at CentraArchy Restaurants, overseeing Joey D’s Oak Room, an upscale family steakhouse in Atlanta.

Named one of the “50 Best Resorts in the World” for 2022 by Conde Nast Traveler, The Westin Riverfront is home to a wide variety of dining outlets, including the Riverfront Market, which offers savory to-go meals & snacks along with a carefully curated selection of retail items. Visitors can also enjoy the on-site Starbucks and The Lookout Lobby Bar, which serves an extensive selection of craft cocktails & local microbrews with seasonal live music.

Opened last summer, Stoke & Rye is rooted in serving approachable yet elevated cuisine with an artisan approach. The menu reflects the Colorado landscape while embracing Chef Sandoval’s creative stylings, giving locals and travelers classic cuisine with a fresh flavor attitude.

Located in the heart of the Vail Valley, The Westin Riverfront features more than 8,500 total square feet of banquet and meeting space, including the 4,000 square foot Riverside Ballroom with floor-to-ceiling windows highlighting stunning Beaver Creek Mountain views, plus a beautifully landscaped Wedding Lawn and a 2,000 square foot outdoor banquet terrace.

The Westin Riverfront offers 230 guest residences, each featuring a custom kitchen, five-piece bathroom, gas fireplace and Westin Heavenly Bed. Amenities include Spa Anjali, an Athletic Club offering 50+ group exercise classes weekly and a year-round outdoor pool and three infinity hot tubs. Skiers & snowboarders can enjoy direct access to Beaver Creek Mountain via the Riverfront Express Gondola during the winter months and unparalleled access to hiking, biking, fly fishing and golf during the spring, summer & fall.
