HMSHost brings Seattle food truck turned iconic restaurant into the airport.
SEATTLE – Tastes of the Pacific Northwest have landed at Seattle-Tacoma International Airport with the opening of Skillet in the North Satellite. Skillet is a modern diner where travelers can enjoy an authentic Seattle dining experience with its famous all-day brunch menu and more.
The Food Network recognized Skillet as one of the best U.S. airport restaurants, with the opening marking the first local restaurant at the airport that originated as a food truck. This new full-service dining experience opened in collaboration with The Skillet Group, Port of Seattle, and global restaurateur HMSHost, along with
its Airport Concessions Disadvantaged Business Enterprise (ACDBE) partner La Plaza International, LLC.
Skillet was born on the streets of Seattle and grew up here, neighborhood by neighborhood. Skillet started from a humble vintage Airstream kitchen, delivering elevated street food to hungry Seattleites curbside, and grew to an iconic Seattle restaurant brand that is now serving Seattle world travelers.
“Skillet is part of the fabric of the Seattle community and now we’re able to share their dynamic comfort food with travelers from around the world inside Sea-Tac Airport,” said HMSHost Vice President of Business Development Stephen Douglas. “We’re grateful to the Port of Seattle for partnering with us to add the finest of Seattle’s culinary scene to its new North Satellite.”
The best of the Skillet classics are on the menu, starting with its brunch favorites: the Fried Chicken & Waffle, the homemade Doughnut Holes or the gluten-free and vegetarian-friendly Chilaquiles, among other enticing options.
Entree and sandwich favorites includes Mama's Meatloaf with pork and beef, glazed with ketchup demi, bleu cheese, onion rings, mashed potatoes, and seasonal vegetables, as well as the Blackened Salmon Sammy with pickled shallot, lemon aioli, and arugula on a potato roll.

We love our new home in the beautiful North Satellite and wish to thank the Port for bringing a bit of the Seattle street scene to the airport. And we hope travelers will love our handmade classics and our comfortable, relaxed atmosphere,” said The Skillet Group President Ann Downs.
The menu also features salads, soup, and poutine. Other menu highlights include Pie in a Bowl featuring bittersweet chocolate pudding, pie crust, sea salt, and cocoa nibs, as well as a kids menu for young travelers to enjoy.
The drink menu is just as exciting, with a selection of spiked coffee, bubbly cocktails, and the signature Bacon Jam Bloody Mary, which includes a bacon-jam infused vodka and bacon salt. For those that want to try them all, Skillet offers a cocktail flight to taste a selection of three.
Travelers in an extra hurry can enjoy the local flavors on the fly with a convenient grab-and-go section offering sandwiches, salads, snacks, and beverages for their flight.
Skillet is all about comfort, not just on the menu, but in its welcoming design. Quintessential Pacific Northwest details throughout the restaurant create a contemporary take on the classic American diner. Travelers will encounter a design reminiscent of Skillet’s street-side restaurants with its signature green upholstered counter seats found at the bar and in the intimate booth seating area.
Incorporating the restaurant’s start in an Airstream, stainless steel is incorporated throughout walls and on lighting. Recycled and reused materials boast a commitment to sustainability, like the reclaimed wood planks that line the booths, benches, and tables. Floor to ceiling windows overlook the tarmac, bringing in natural light and creating the perfect place to relax with a meal before flight. Power outlets are located throughout to keep travelers fully charged and connected while dining.
In addition to this new airport location, Skillet’s Airstream food truck still serves its much beloved food throughout the streets of Seattle, along with its three brick and mortar Seattle restaurants – Skillet Capitol Hill; the Skillet Counter located in the Armory at the Seattle Center; and Skillet Regrade located at 6th.
Skillet’s opening is part of the North Satellite Modernization Project at Sea-Tac Airport. A second Skillet location is slated to open in the airport and greet travelers in the C Concourse by the end of the year.
