Fresh locally sourced dining come to Miami International Airport

Icebox Cafe becomes first airport restaurant certified by Florida Fresh and Redland Raised programs.

MIAMI – The “farm-to-table” culinary movement has landed at Miami International Airport, with Icebox Cafe last month becoming the first airport restaurant certified by the State of Florida’s “Fresh from Florida” program as a provider of locally sourced food. Additionally, based on Icebox Cafe’s percentage of purchases from southern Miami-Dade County’s farm area, it also meets the qualifications of the County’s “Redland Raised” program. The popular Miami Beach restaurant expanded to MIA in 2010 and then opened its Mediterranean Kitchen location inside the airport’s new North Terminal Marketplace in March.

“Now more than ever, travelers are expecting world-class airports to provide the freshest, healthiest food options possible, so to that end, we congratulate Icebox Cafe on becoming certified as Florida Fresh and Redland Raised,” said Miami-Dade Aviation Director Emilio T. Gonzalez. “We look forward to more restaurants at MIA increasing their use of locally grown food, which obviously benefits our local economy as well.”

The “farm-to-table” movement represents a return to the use of extremely fresh ingredients that have been grown or sourced usually within 100 miles of the restaurant location. This method ensures that the food available is the freshest and most in-season, while promoting and focusing on the culinary character of a given region and improving the environment as well.
