Renowned members of the Santa Fe cultural fabric, the rejuvenated historic restaurant and bar offer a fresh look that stays true to their heritage while seamlessly joining The Inn of The Five Graces hospitality experience.

SANTA FE, NM – The iconic Pink Adobe and its locally-loved Dragon Room bar have officially reopened after a restoration and redesign as they officially join The Inn of The Five Graces hospitality experience. Located adjacent to The Inn, in the heart of Santa Fe’s historic Barrio De Analco neighborhood, the lovingly restored Pink Adobe and Dragon Room bar feature an updated color palette that is distinctly Santa Fe, a new kitchen with the latest appliances, a Private Dining Room, and menus that seamlessly blend the history and heritage of the storied spaces with the relaxed sophistication of one of the top culinary experiences in the Southwest.

“The Inn of the Five Graces is happy to welcome our beloved neighbor and one of Santa Fe’s most iconic restaurants and bars into our family. Though a “secret” entrance now allows hotel guests to access The Pink Adobe directly through the courtyard, locals and visitors alike will find the Pink relatively unchanged,” commented Sylvia Seret, owner of The Inn of The Five Graces.

Complementing the physical redesign and aesthetic refresh, the Pink Adobe now features upgrades in the overall guest experience, including a Private Dining Room for special events and VIP guests – up to 14 guests, live music throughout the week, and a buyout option for events and celebrations that accommodates from 70-100 between the restaurant and picturesque patio.

The restaurant’s new menu features a range of ‘New Mexican Cajun’ dishes that pair perfectly with the offerings of the Dragon Room Bar. A meal at the Adobe can begin with the time-honored Chips Trio – a dip dish with salsa, guacamole, and queso served in chip bowls – or with a local favorite and Pink Adobe signature, the fiery Clams Lucifer. For mains, guests can indulge in a selection of New Mexican dishes from Red Mole Pork Tenderloin to Fire-roasted Chile Relleno to a customizable Enchilada Bar. Guests can also turn to more traditional eats like the 12oz. Steak Dunigan or Tournedos Bordelaise, part of the Pink’s Classics menu that has transcended the culinary fads and garnered a loyal following. While the dishes range in style and culinary root, they share the commonality of locally sourced ingredients and a preparation that is sophisticated, approachable, and worthy of the storied locale.

The Dragon Room bar echoes The Pink Adobe’s attention to detail and unique style in its food and drink offerings. Beginning with a selection of Tequila-based cocktails – including the signature Silver Coin Margarita – and other inventive libations, the Dragon Room retains its charm and convivial atmosphere that have made it a Santa Fe Favorite. For oenophiles, a worldly selection offers white, rose, bubbly, and red wines from Old and New World destinations. These beverage offerings that also include a full bar, accompany the Dragon Room’s popular Taco Flights, which offer three-taco combinations featuring Birria, Chicken Tinga, Baja Fish, and Jackfruit Sofrito.

“Though times change, some things never change at The Pink Adobe,” said founder Rosalea Murphy on the restaurant’s 50th anniversary in 1984. Now, several decades later, the Seret family, proprietors of The Inn of The Five Graces, has taken this message to heart by keeping the core of The Adobe alive in its eclectic decor that honors Santa Fe’s artists and rich history. At its roots, The Pink Adobe was a favorite haunt for local artists – John Sloan, Will Shuster, and Randall Davey – while also offering renowned visitors like Mark Rothko and Georgia O’Keeffe a seat at their table. The restaurant was even a home of humble beginnings for artists like Harry Partch, the famous composer, who washed dishes in exchange for his room and board while composing his well-known score “Highway 66.” The Pink Adobe remains a focal point for artists, and almost any night in The Dragon Room bar, one can find a table occupied by local artists – discussing, imbibing, eating, and setting the tone for the local sense of place.

The Pink Adobe was founded in 1944 by Rosalea Murphy, who was known for her colorful personality and independent spirit; she was a fascinating character in her own right—a fitting complement to the eclectically unique property. An early advocate for women’s rights, a painter, an art dealer, and a chef, Murphy was born in Omaha, Nebraska, in 1915 and raised in New Orleans to a family of artists and writers. Upon settling in Santa Fe, she quickly made a name for herself as a generous and welcoming host of lively parties and home-cooked meals. The popularity of her Creole meets Southwest cooking led to the opening of The Pink Adobe, which swiftly became a crossroads for cultural exchange at the time.

Now part of The Inn of the Five Graces family, The Pink Adobe invites guests to savor farm-to-table delights and sophisticated New Mexican Cajun cuisine, reminiscent of the colorful and textured palette brought to the restaurant by its founder. The restaurant’s vibrant atmosphere and rich history are the backdrop for a culinary experience that is worthy of the newly-minted Relais & Châteaux designation.
